These shepherd’s pie potato skins make for the perfect St. Patrick’s Day party snack

Update a comfort food classic into a snack-sized party food perfect for serving a large group of guests at your St. Patrick’s Day celebration. Made with sautéed vegetables, ground beef, rich gravy, and baked mashed potatoes, Shepherd’s Pie is a fan favorite. Take the best bits of classic Shepherd’s Pie and put on a twist on tradition by creating individual servings of Shepherd’s Pie Potato Skins. Watch the video below to find out how to make your own.

Ingredients

Potato skins and mashed potato:

  • 3 pounds Russet potatoes, about 7 small-medium sized potatoes
  • Olive oil or grapeseed oil, as needed
  • 4 Tablespoons unsalted butter, softened
  • 3 Tablespoons whole milk
  • Kosher salt and black pepper, to season
  • Shredded or grated cheddar cheese, for sprinkling

Shepherd’s pie filling:

  • 1⁄2 Tablespoon unsalted butter
  • 1 teaspoon olive oil, or grapeseed oil
  • 1 cup diced onion (1⁄2 medium onion)
  • 3 garlic cloves, minced
  • 1⁄2 teaspoon dried thyme
  • 1⁄4 teaspoon dried oregano
  • 1 pound ground beef (80% lean, 20% fat)
  • 2 Tablespoon tomato paste
  • 1 Tablespoon Worcestershire sauce
  • 1⁄2 cup low-sodium chicken broth
  • 1⁄2 cup each frozen corn, peas, and diced carrots (1 1⁄2 cup total)
  • Kosher salt & black pepper, to taste

Instructions

Potato skins:

  1. Preheat oven to 400 degrees F.
  2. Scrub potatoes clean. Pat dry. Pierce each potato 5-6 times with a fork, to allow steam to escape during cooking process. Rub each potato with oil. Bake for 40-50 minutes until potato are tender and can easily be pierced with a paring knife.
  3. While potato are baking, prepare filling.
  4. Remove potatoes from oven and allow to cool. Once potatoes are cool enough to handle, slice each potato lengthwise. Be careful, as potatoes will steam.
  5. Use a spoon to carefully scoop out the insides of potato, leaving about 1⁄4-inch of potato on the skin. Place potato filling in a large bowl and set aside.

Mashed potato topping:

  1. Mash potato filling using a fork or potato masher.
  2. Mix in butter and milk. Season with salt and pepper to taste. If desired, place mashed potatoes in a piping bag fitted with a large star tip.
  3. Set aside until ready to assemble.

Shepherd’s pie filling:

  1. Melt butter and oil in a large skillet over medium heat. Add onions. Cook for about 3 minutes until almost tender.
  2. Add in garlic, thyme, and oregano. Stir to combine. Cook for another 2 minutes until onions are translucent.
  3. Add ground beef. Stir often and cook until beef is well brown. If desired, pour off excess fat.
  4. Add tomato paste and Worcestershire sauce. Stir until beef is well coated.
  5. Add in chicken broth and frozen vegetables. Bring mixture to a simmer and cook until vegetables are warm. Season with salt and pepper, to taste.
  6. Remove from heat and allow to cool until ready to assemble.

Assembly:

  1. Brush the potatoes all over with oil. Season with salt.
  2. Return to 400 degree F oven for 10 minutes baking potatoes cavity side up. Flip potatoes skin side up and bake for another 10 minutes.
  3. Turn potatoes cavity side up. Fill with Shepherd’s Pie filling mix. Pipe or spoon mashed potatoes on top. Sprinkle with cheddar cheese.
  4. Bake for 10-12 minutes until the mashed potatoes start to brown. Serve immediately.

How do I create a signup sheet?

After selecting your sheet template, create a title for your signup sheet and add the date, the location, the time (if applicable), who the organizer is, the organizer’s phone number or email and an optional note describing the event to your volunteers. What information should be included on a signup sheet?

When it comes to signup sheet information, there are some essentials to include regardless of what you’re organizing:

  1. A title for your signup sheet. Tip: Aim to keep your signup sheet title concise but clear. You want volunteers to read it and have a general understanding of what your event is about, and also make it easy for them to look for later if they need to reference your sheet again. You have the option to include a more descriptive note in a different field about your event, so save the more in-depth details for that!
  1. When and where the event is taking place. 
  1. The organizer’s name and phone number.
  1. Slots for volunteers to choose from. Once you choose the SignUp Sheets template that fits the occasion, the slots you’ll need for your sheet will be right there and ready for you to add the relevant info, such as dates, times, items to bring and tasks to complete. 

When adding your slot information, clearly define what people are signing up for, especially for a what-to-bring list or role assignments. If you want someone to bring healthy snacks for kids to enjoy after a game, specify that. You want your volunteers to feel confident in what they’re bringing and to make it easy for them to know what’s expected of them. It will save them time and stress (and you, too!). That being said, if you make your ask too specific (for example, asking for a hard-to-source item or something expensive), you may not end up with a volunteer for it. So be clear about what you expect, but also be reasonable!

Aside from providing the basic signup information, you can also add optional descriptions to both your entire signup sheet and individual slots. While not required, they can help guide your volunteers further and provide more information. You can add information about allergies, preferences and general info about the event. You can also add a wish list to make it easier for your volunteers to bring exactly what you need!
