You have to try Natasha Bull’s St. Patrick’s Day colcannon

Mashed… fried… baked… over here, we’re big fans of any and every potato preparation. We’ve hosted a whole lot of gatherings and we *can* confirm that potatoes are a total crowd-pleaser (and are often the first to go from the table). So — of course — we really had to bring it when it came to potato planning for St. Paddy’s Day!
This Irish mashed potato recipe, called “colcannon”, was historically eaten on Halloween, but it’s become quite popular for St. Patrick’s Day over the years. A delicious combination of creamy potatoes, flavorful greens, and crispy bacon… it’s a hearty twist on your typical mashed potatoes. Try it out for your St. Patrick’s Day celebration — it might just become your new favorite comfort food!

Ingredients
2.5 pounds Russet potatoes, cut into chunks
1/2 pound bacon, cut into small pieces
3 cups kale or green cabbage, chopped
1/2 bunch scallions (green parts only), chopped
1/2 cup heavy whipping cream
2 tablespoons butter, plus extra for serving
Salt & pepper to taste
