The only thing better than waking up to a pot of gold on St. Patrick’s Day is waking up to these Lucky Charms pancakes!

Everyone knows you’re supposed to wear green on St. Patrick’s Day… but what about eating green, too? Uh, no… we’re definitely not talking green juice. Meet the whimsical St. Patrick’s Day breakfast idea that will have your little ones all smiles and rainbows — the Good Luck Pancake Stack. Imagine coming downstairs on St. Paddy’s morning as a kid and seeing these… ugh, it’s really so special getting to create memories like this for your own kids! Plus, it’s easier than it looks (we promise) because we are *so* not above using boxed mix — when you’re in a rush but want to do something thoughtful for your fam, opting for your favorite pancake mix is a lifesaver. Ingredients 

  • 2 cups of buttermilk pancake mix
  • 1 cup of milk or water (depending on your selected pancake mix directions)
  • 2 large eggs
  • 1 teaspoon of vanilla bean paste or vanilla extract
  • Green food coloring 
  • 1¼ cups of Lucky Charms marshmallows or dehydrated marshmallows 

Instructions 

  1. Preheat a griddle to 350°F.
  2. Whisk together milk, eggs, and vanilla bean paste in a large bowl. Add the green food coloring.
  3. Add the pancake mix and stir until moistened — don’t worry if it’s a little lumpy!
  4. Optional: Stir in ¾ cups of marshmallows. Heads up… the marshmallows will likely melt onto the griddle a bit (so make sure you grease it up beforehand)!
  5. Add the batter to the griddle, using a ¼ cup to scoop. Cook for 3 to 4 minutes, until they begin to bubble. Flip, then cook on the other side until cooked through.
  6. Top ‘em off with syrup, marshmallows, and whipped cream!
