We’re telling our community first… fruit and vegetable decorations are going to be THE hosting trend this spring and summer. From centerpieces created from layers of stone fruit to tablescapes covered in heirloom tomatoes, garden-fresh produce is the hosting detail that we just can’t get enough of. Enter… these adorable and shockingly easy-to-assemble carrot ice cubes! No, we’re not making you put an actual carrot in your spring sips… though, we won’t knock it ’til we try it. This recipe combines vibrant citrus with spring’s favorite veggie motif, the carrot, to make the cutest drink garnish you ever did see!

Materials

Instructions

  1. Slice your oranges in half, then slice them again into 1/2 inch segments.
  2. Make a small cut to remove the middle of each orange slice. You want to slice at an angle to create a tapered look that mirrors the shape of a carrot.
  3. Cut a lime in half, then scoop out the fruit so only the peel remains (we recommend using the inside of the lime for homemade limemade or even guac so nothing goes to waste!). Cut the peel into 1/4 inch slices lengthwise.
  4. Nestle an orange slice into the ice cube tray, then tuck a few lime peels behind the top of the orange. Fill each ice cube slot with a bit of water, then freeze until set.
  5. Once frozen, pop into the springtime drink of your choice!
