"Wood smoke is an antiseptic and preservative. To the extent natural selection favors certain genes, humans have co-evolved with wood-fired cooking and adapted to love the taste. Those who didn't met their fate with diarrhea, trying to outrun predators. Too bad smoke is also slightly carcinogenic.
Good barbecue requires smoking at low temperature for hours, but sometimes they haven't the smoker capacity. Unlike their early months in business, to keep up production, they have sometimes pre-simmered in water, as betrayed by chewy bones, or barbecued more than a day in advance. Now if only they made their sandwiches with whole wheat rolls and offered a seasonal menu…
